Quick Chickpea Curry

Awesome recipe.  But beware: it will make your house smell like an Indian Buffet.  It has the perfect amount of flavor and spice.  I mixed in a packet of pre-cooked (microwave!) Uncle Ben’s Jasmine Rice at the end and we had warmed up pita bread on the side.  Yum!

    I love an Indian Buffet! But by Day 2, 3… when the smell is still lingering… I need to have my vanilla candle burning. But I really did think this was a great recipe.
