Black Bean and Corn-Topped Potatoes from Cooking Light

This vegetarian recipe was fantastic! It was a little spicy but we used medium salsa so we might dial back the heat a little next time. Instead of cooking the onions in the black bean mixture we topped ours with fresh, chopped green onions. The only thing that might make it better is some chopped avocado. Yum!

Awesomeness is a neat little potato jacket. Thanks for sharing. We do a baked potato night every now and again and this version would definitely get one of my kids more enthused.
